ALIVE magazine joined Samuel Adams at Scape American Bistro in the Central West End for The Dish, a special cooking class series with Executive Chef Eric Kelly.
Guests watched as Chef Kelly prepared a fabulous four-course meal, all paired with a variety of Sam Adams’ stouts, pilsners and lagers. Attendees enjoyed an array of passed appetizers during a cocktail reception which included Chef Kelly’s world-famous Usinger Sausage with roasted peppers, warm Reuben sliders and a dill-cured salmon fork drizzled with lemon confit. Guests then took their place in Scape’s event space and demonstration kitchen where they learned the intriguing history of Samual Adams beer and its local roots in St. Louis from Boston Beer Company representative Jay Hornback as well as behind-the-scenes tricks to Chef Kelly’s famous rich and creamy roasted quail risotto. Following the cooking demonstration, guests moved to the dining room where they enjoyed a selection of Samuel Adams beers paired perfectly with three succulent courses: sweet Santa Barbara shrimp with creamy cheddar grits, roasted quail risotto and oven-fresh buttermilk biscuits with chocolate gravy. Only one word could describe this evening of tasteful bliss – scrumptious! It was certainly an unforgettable night of wonderful food, world class beers and warm conversation.
Tony Mantuano was in town for the ~scape 2008 Celebrity Chef Dinner.
Chef Mantuano is executive chef at Spiaggia and Café Spiaggia. Spiaggia is the only four-star Italian restaurant in Chicago. Tony Mantuano was named the James Beard 2005 Best Chef: Midwest winner and was nominated in 2002, 2003 and 2004.
